Maple Walnut Oatmeal Cookies
It’s alway nice to have a good cookie recipe that’s not loaded with sugar. You would say that this one even somewhat healthy – as far as cookies go.
This recipe is vegan, sweetened with maple syrup and has more oats than anything else.
Added bonus – no baking powder.
Grinding up the walnuts gives a rich flavor and texture that replaces butter in traditional cookies.
I have used whole wheat pastry flour here but you can substitute rice flour if you want to make it gluten free.
Other oils like safflower, sunflower or a light olive could also work.
If you want to add raisins, currents or other chopped dried fruit that’s always an option.
For added deliciousness, steam raisins or currents for 5 minutes before adding.
This is a great snacking cookie by itself and it also goes with lots of other foods. My current favorite combo is with Strawberry Rhubarb Compote.
Maple Walnut Oatmeal Crisps
Make 24 small cookies
Prep: 10 minutes
Cook time 12 minutes
Ingredients:
1 1/2 cups rolled oats
1/2 cup walnuts
1/2 cup whole wheat pastry flour
1/4 tsp, sea salt
1/3 cup grapeseed oil
1/3 cup maple syrup
Recipe:
Preheat over to 350 degrees.
In a food processor, grind 1/2 cup of the rolled oats to a course meal. Put in a mixing bowl. Grind walnuts to a course meal. Add to mixing bowl with remaining ingredients. Mix thoroughly and let sit for a few minutes. Divide cookie dough in half. Make 12 small balls from each half. Press dough balls tightly when forming. Arrange on a lightly oiled cookie sheet and flatten. i use the dry measuring cup (lightly oiled).
Bake at 350 for 10 to 12 minutes. Remove on to a rack to cool. Will keep one week in a sealed container.
