Scale on Organic and Garden Cucumbers

Not all great vegetables are photo perfect. I recently encountered some fresh, local, organic cucumbers that had a little scale on them. Loving the farm and needing some cucumbers I bought them. (Some times my garden cucumbers look like that.}

I didn’t want to eat the scale but hate to peel organic vegetables knowing the abundance of  valuable nutrients  in the skin(and not wanting to waste).

So I pulled out my old fashioned  zester and scored the the skins. It was deep enough to get the scale of but not deep enough to take away all of the skin.

Perfect.

And it looks nice.

The cucumbers were so sweet and delicious . The best I have tasted this year.
