Farm Stand Tomato Cuke Salad
These gorgeous tomatoes and purple basil were fresh inspiration to make this simple and delicious salad.
This is the kind of salad you don’t need a recipe for. Use what you have in the amounts you want: you could add fresh raw kale or use dill. Add lemon or hemp seeds…whatever you want.
The basic technique is to cut the vegetables into bigger pieces so you can really enjoy their fresh flavors. Also the dressing is made in the bowl and stirred before you add the remaining ingredients for a well blended backdrop.

Farm Stand Tomato Cuke Salad
Prep time: 10 minutes
Makes about 8 cups
Ingredients:
3 to 4 cups chopped tomatoes
3 to 4 cups chopped cucumbers
1 small or 1/2 large red onion – sliced thin
1/4 cup fresh purple basil – rough chopped (use any basil you have)
3 small or 2 large cloves garlic – minced
3 Tbs. red wine or apple cider vinegar (You could also use balsamic)
1 Tbs. olive or grape seed oil (optional)
1/2 tsp sea salt or to taste
1/8 tsp red pepper flakes or fresh ground black pepper (optional)
Directions:
In a large add pepper, sea salt, oil (if using), vinegar and minced garlic. Stir and let sit while you prep the other ingredients.
Basil first, chop, add and stir. Red onion – chop, add and stir. Repeat with the cucumbers.
Add the tomatoes last and stir gently after.
Enjoy!
This will keep several days in the fridge if you have any leftover.
