Basic Cannellini Beans
Makes 7 (ish) cups
Prep time 5 minutes plus soaking
Cook time :1 hour 10 minutes for stove top
Cook time (Instant Pot): 20 minutes plus 10 minutes for pressure cooker or Instant Pot
Ingredients:
1 lb. dry cannellini beans
1/2 tsp sea salt
Directions:
Clean beans and wash. Place in a large bowl and cover with water by 2 inches. Cover and soak for 8 or more hours. Drain beans.
For stove top
Place soaked beans in a pot and cover with eater by an inch. Bring to a boil and reduce heat to low. Put a lid slightly ajar on the pan and cook on low heat for an hour or until the beans are tender but not falling apart. Add water as needed to keep the water level up to the beans.
When beans are tender, remove lid and sprinkle sea salt over. Turn up the heat a little and cook for 10 more minutes.
Done.
For pressure cooker or Instant Pot
Place soaked beans in pressure cooker and add water up to the level of the beans. Secure lid and bring to pressure. With a stove top pressure cooker then reduce heat to low and cook for 20 minutes.
With an Instant Pot the the pressure level to low and the time for 20 minutes.
For both – After 20 minutes release pressure. The beans should be tender but not mushy. If they are still hard cook a little longer. (There is a variable with beans.) When tender add sea salt and cook for 10 more minutes on low heat. (If an Instant Pot then you can use 10 minutes on sauté.)
You can then drain the beans or not drain the beans depending on what you are using them for.
