Apple Ginger Mint Tea
I was recently given a recipe for making fresh ginger tea by my (very cool) sister in law Sue.
“Take a knob of ginger, slice and boil in 2 cups water for 10 minutes. Strain the tisane and add lemon and honey to taste. Drink hot.”
I was recovering from the flu. I made it.
This ginger tea is awesome!
I felt it relaxed my cough, soothed my throat , invigorated my appetite, was delicious and more.

Ginger is an amazing food. It has so many health giving attributes. It is know for increasing circulation, aiding digestion, helping with nausea and morning sickness, warming cold limbs, stimulating your immune system and balancing your body. And there is more to learn about ginger…. a lot more.
This is all good and worth the study time.
These days I love a cup of hot fresh ginger tea after a cold spring walk. I often make different versions.
I go with my inclination for that day.
Recently I tried ginger tea with apple juice and fresh mint.
Not having lemon and not wanting to venture out, I used what I had that was sour.
Frozen cranberries. It worked! (You can also use a touch of apple cider vinegar in place of lemon.)
For a different twist, try lemon balm ( melissa officinalis).
No fresh ginger on hand , no problem. You can make great ginger tea with dried ginger.

Ginger Mint Apple Tea
Makes 1 cup
Prep and cook time 20 minutes
Ingredients:
1 piece ginger ( enough to make 1 Tbs sliced)
3 large mint leaves – chopped or sliced thin
1 cup water
1/2 cup apple juice
Optional – A few ( frozen or fresh) cranberries or a squeeze of lemon
Directions:
Wash ginger and slice thin. No need to peel.
Put in a small saucepan with water and apple juice. Bring to a boil, (add cranberries if using) reduce heat, and simmer on a low boil for 10 minutes. Add mint, turn off heat and let steep for 5 minutes.
(If you are using lemon add some here.)
Serve hot.
Inhale as you sip.

Ginger Tea ( with dried ginger)
Makes 1 mug
Takes 10 minutes max.
Ingredients:
1/4 to 1/2 tsp. dried ginger ( organic is good)
1 1/4 cup water or 1 cup water with 1/4 cup apple juice
optional – mint leaves 1 Tbs. fresh chopped or 1 tsp. dried
Directions:
Bring all ingredients to a boil and simmer for a minute or two. Turn off heat and let steep for 5 minutes. You can cover to retain heat.
Strain and serve hot.
