Avocado Lime Crema
I try not to buy avocados because they don’t grow here in the Northeast.
But I do treat myself occasionally and I really have a lot fun cooking with them.
I made this simple recipe to serve with Black Bean and Butternut Chili.
It will also go well with taco bowls, salads, fish etc..
Honestly, it is just a creamy guacamole.
Basically it is made with blended or smushed avocados, Veganaise, white onion and lime.
A pinch of sea salt.
I usually opt for making this in a suribachi bowl with a pestle. Use whatever you have. A fork and any bowl works fine. You can also make this in a mini food processor if you want a creamier texture.
If you don’t have Veganaise you can add a drizzle of olive oil or sour cream or omit.
Instead of lime you can use apple cider vinegar. Start with 1 tsp. and taste.
I love the bite and crunch of minced white onion in this.
However, if your are going for very creamy you can grate the onion and squeeze the juice or ( a lot easier) add chopped scallion as a garnish.
Will keep 2 days in the fridge.
Enjoy!
