Orange Ginger Dressing
It always comforts my soul to prepare and share heathy beautiful food.
( And yes I love to eat it too.)
Here is a simple dressing that is lively, light and uplifting.
Make it with what you have on hand(no need to run to the store).
In this version the orange , ginger and maple syrup make a dynamic combo.
If you don’t have an orange you can a juice from 1/2 lemon. Or 1 Tbs. lemon juice.
You can add 3 cloves of garlic (crushed) instead of the ginger. (Think lemon, garlic, dill)
Substitute olive oil or walnut oil for grapeseed.
A touch of cayenne might be nice some days.
Etc.
Mix, taste, adjust seasoning,
This will keep well only for a few days ( because of so many fresh ingredients), so make small batches unless you are serving a crowd.

Orange Ginger Dressing
Makes about 1 cup
Prep time: 10 minutes
Ingredients:
1/4 cup oil
1/4 cup apple cider vinegar
1 Tbs. maple syrup
1/4 to 1/2 tsp. sea salt
1 Tbs. minced red onion
2 Tbs. grated ginger
1 scallion – sliced thin
Juice of 1/2 orange
A tiny pinch of white pepper (optional)
Directions:
Prep ingredients. Squeeze as much juice out of the ginger as possible. If the ginger is fresh and not stringy you can add some of the tender pulp back in.
Mix all ingredients on a small jar. Cover tightly and shake well.
Serve on a fresh salad. In the photo i used lettuce, micro greens and radish.
Use whatever you have on hand to make your salad.
The plate is garnished with the other half of the orange.
This is also delicious on cooked greens and on other varieties of salads.
